Ginger Nut Slice

❋ ginger nut base
1 1/2 cups almond meal
2 tbsp arrowroot
1 tsp baking soda
2 tsp ground ginger [fresh works too]
1/4 tsp nutmeg
1 tsp cinnamon
pinch salt
1/4 cup raw honey
1/4 cup coconut oil (melted)
1/2 tsp vanilla extract
INGREDIENTS
❋ almond caramel
1 cup almond butter
1/4 cup raw honey
2 tsp maca powder
❋ ceremonial chocolate
60g ceremonial cacao paste
2 tbsp raw honey (more or less to taste)
1 tbsp coconut oil
preheat oven to 180 degrees celsius.
combine the dry ginger nut base ingredients in a bowl & stir in the honey, coconut oil and vanilla extract, mix until a sticky batter is formed.
line a baking dish with baking paper, spooning the mixture in evenly.
bake for 10-15 minutes, until the top is golden brown. set aside to cool.
mix together the almond caramel ingredients, ensuring all maca lumps are dissolved.
spoon almond caramel mixture over the cooked base, spreading evenly (if the mixture is thick, use the back of a spoon to spread).
place a heatproof bowl over a pot of simmering water, add the ceremonial cacao, coconut oil & honey, stirring continuously until melted.
pour the ceremonial chocolate over the top of the almond caramel, tilting the slice to ensure it is fully coated.
place in the fridge for at least an hour to set, slice into desired size.

CEREMONIAL CACAO
This incredible superfood is the raw form of chocolate. It is the seed from the Theobroma Cacao Tree [native to Central and South America], which is fermented, sun dried and ground into a paste.
