Zesty Orange Cake

❋ orange cake
1 3/4 cups Self Raising Flour
1 tsp Baking Soda
1/2 tsp Salt
1 cup Freshly Squeezed Orange Juice (about 2.5 juicy ones)
1 Orange worth of Zest
1 tsp Vanilla Extract
1/3 cup Extra Virgin Olive Oil
1/3 cup Raw Honey
1 tbsp Apple Cider Vinegar
2 Free Range Eggs (if you’re vegan, omit!)

1 block (250g) Cream Cheese
1ish tbsp Raw Honey // Maple Syrup
1 Blood Orange (or just a regular one!)
*optional 3 drops Orange Essential Oil

INGREDIENTS
cake!
preheat oven to 180 degrees celsius.
combine the dry ingredients in a bowl.
pour over the freshly squeezed orange juice, zest, olive oil, vanilla extract & honey, stirring to combine.
crack the eggs onto the mixture & mix again.
add the apple cider vinegar, you will see the mixture start to bubble.
line 2 round cake tins & divide the mixture into each tin.
bake for 20-25 minutes, until the skewer comes out clean & your house has a delicious aroma.
let cool while you prep the icing.
❋ if you only have one tin on hand, cook half and then the other half afterwards. The batter sits in the fridge just fine!

slice half the blood orange into thin rounds, placing on a paper towel. Place another paper towel on top & gently press to rid excess juice.
zest & juice the second half of the blood orange.
beat the cream cheese until soft & lumps are smoothed.
stir in the honey/maple syrup, pinch of zest & slowly, spoon by spoon, the blood orange juice, oil if using, until desired consistency & colour (add more sweetener if desired).
assemble the cake, layering icing in between layers and finally on the top.
decorate with the orange rounds and basil leaves.
