Lemony Creamy Beans
15 minutes // 10g of fibre per serve
[2 serves]
1 red onion (diced)
2 garlic cloves (crushed)
1 lemon (juiced & half rind)
1 tsp sweet paprika
1 cup zucchini (finely grated)
1 tin cannellini beans (rinsed)
1 cup cherry tomatoes (halved)
1/2 cup bone broth
handful spinach
a few tbsp greek yoghurt
serve with crusty bread <3
INGREDIENTS
heat your pan with olive oil, sauté the onions for 1 minute, mix in the garlic & paprika
add the grated zucchini, mixing through, cook for 30 seconds
squeeze in the lemon juice & add the rind
mix through the beans & tomatoes, pouring over the the bone broth
simmer for a few minutes until thickened
add the spinach just before serving
top with greek yoghurt
