Lemony Creamy Beans

15 minutes // 10g of fibre per serve

[2 serves]

  • 1 red onion (diced)

  • 2 garlic cloves (crushed)

  • 1 lemon (juiced & half rind)

  • 1 tsp sweet paprika

  • 1 cup zucchini (finely grated)

  • 1 tin cannellini beans (rinsed)

  • 1 cup cherry tomatoes (halved)

  • 1/2 cup bone broth

  • handful spinach

  • a few tbsp greek yoghurt

serve with crusty bread <3

INGREDIENTS

  1. heat your pan with olive oil, sauté the onions for 1 minute, mix in the garlic & paprika

  2. add the grated zucchini, mixing through, cook for 30 seconds

  3. squeeze in the lemon juice & add the rind

  4. mix through the beans & tomatoes, pouring over the the bone broth

  5. simmer for a few minutes until thickened

  6. add the spinach just before serving

  7. top with greek yoghurt
