Choc Chip Cookies

// gluten free, vegan

  • 1.5 cups almond meal

  • 1/2 tsp baking soda

  • pinch of salt

  • 1/4 cinnamon

  • 1/4 cup honey

  • 1/4 cup melted coconut oil

  • dash vanilla essence

  • handful of chopped ceremonial cacao / choc chips

INGREDIENTS

  1. preheat oven to 180 degrees

  2. combine all the ingredients in a bowl

  3. (optimal) pop in the fridge for 20 minutes to harden slightly [minimises spreading while baking]

  4. roll into balls [about 12-14] & place on a lined tray

  5. indent with a fork

  6. bake for 8-10 minutes until golden

  7. let cool for 10 minutes to set
