Fudgy Sweet Potato Brownies
// gluten free
1 cup cooked sweet potato [skinless]
2 free range eggs
1/2 cup almond meal
1/3 cup cacao powder
1/3 coconut sugar
1/2 cup olive oil
60g ceremonial cacao or dark chocolate [melted]
INGREDIENTS
preheat your oven to 180 degrees celsius
blend or mash the sweet potato until smooth
crack in your eggs, pour in the olive oil & mix together
add the almond meal, cacao powder & coconut sugar then mix well
pour in your melted ceremonial cacao & mix again until combined
line a square cake tin & pour in the mixture
bake for 15-17 minutes
let cool before slicing into 9-12 pieces
