Fudgy Sweet Potato Brownies

  • 1 cup cooked sweet potato [skinless]

  • 2 free range eggs

  • 1/2 cup almond meal

  • 1/3 cup cacao powder

  • 1/3 coconut sugar

  • 1/2 cup olive oil

  • 60g ceremonial cacao or dark chocolate [melted]

INGREDIENTS

  1. preheat your oven to 180 degrees celsius

  2. blend or mash the sweet potato until smooth

  3. crack in your eggs, pour in the olive oil & mix together

  4. add the almond meal, cacao powder & coconut sugar then mix well

  5. pour in your melted ceremonial cacao & mix again until combined

  6. line a square cake tin & pour in the mixture

  7. bake for 15-17 minutes

  8. let cool before slicing into 9-12 pieces
